What you need (minimal off-grid setup)
- 1 non-stick frying pan (medium)
- 1 spatula or wooden spoon
- 1 small knife + mini cutting board
- Oil or butter, salt, pepper
- (Optional) a lid (or a large plate you can use as a lid)

1) Loaded scrambled eggs (spinach + cheese)
Ingredients: 2–3 eggs, a handful of spinach, shredded cheese, salt/pepper, oil/butter.
Steps:
- Warm the pan with a little oil/butter.
- Sauté spinach for 1 minute.
- Add beaten eggs and stir 2–3 minutes.
- Turn off heat and add cheese to melt.
Add-ons: cherry tomatoes, mushrooms, ham/turkey, or a spoon of salsa.
2) Quick “whatever’s-in-the-fridge” quesadilla
Ingredients: 2 tortillas, cheese, cooked chicken/turkey (optional), salsa (optional).
Steps:
- Place one tortilla in the pan.
- Add cheese + filling.
- Top with the second tortilla.
- Cook 2 minutes per side over medium heat.
Tip: No lid? Press gently with a plate (careful—hot!).
Swaps: black beans + corn; or just cheese + jalapeños.
3) Fast fried rice (with pre-cooked rice)
Ingredients: cooked rice, 1 egg, frozen veg mix (or fresh), soy sauce.
